Breaking news – summertime is a great time for salads. I know, I know – it’s a little surprising to hear the gal who would live on chocolate chip cookies alone waxing poetic about summer salad recipes. But life is all about balance, no?

While I love soup on a cold winter’s night, I’m pretty stoked that we added deli salads and yummy dips to our prepared meal delivery menu for the summer months. By now you’ve hopefully seen the addition of taco pasta salad and the watermelon with arugula kinds of items available to order for Wednesday or Sunday delivery. We think they can be the base for a fun and easy Tuesday night meal on their own or serve as the perfect side dish for your next backyard BBQ.

Cabbage, carrots, almonds, oranges, and Ramen noodles combine to make one great side dish salad perfect for a backyard BBQ or potluck dinner.

  1. Combine all the salad fixings ingredients except the mandarin oranges in a large bowl.
  2. Combine all the dressing ingredients in a mason jar or other container with a sealed lid and shake until completely combined.
  3. Pour dressing over the salad and carefully toss to combine. Add the oranges towards the end to they don't get smashed.
  4. Serve the salad within 4-8 hours. Keep in the fridge until service. Can be served cold or at room temperature.

Notes

You could absolutely skip the almonds if going nut-free.
