  • ½ cup maple syrup
  • 1 cup creamy peanut butter
  • 1 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 6 tbsp unsweetened cocoa powder
  • 6 tbsp flaxseed meal
  • ¼ tsp kosher salt
  • 4 tbsp mini chocolate chips

Instructions

  1. In the bowl of your food processor, combine the peanut butter, maple syrup, and vanilla until smooth. Next, add the oats, cocoa powder, flaxseed, and salt. Pulse until well combined. Stop and scrape the sides of the bowl or add 1-3 tbsp of water if necessary. Once combined stir in the chocolate chips.
  2. This creates a relatively crumbly batter, so use a cookie scoop and your hands to mold into 24 small balls. Store in an airtight container in the fridge or freezer for at least four hours.

Notes

- As mentioned in the instructions, this batter is crumbly to begin. Add water a tablespoon at a time to bind, but you don’t want it to get too wet. A cookie scoop and/or clean hands will smash it all together nicely.
