The recipe itself uses up leftover chicken, that last bit of BBQ sauce, just a handful of craisins, etc. Use whatever is on hand for this tasty meal.

Ingredients
1poundboneless chicken breast
1/2cupdiced red onion
3/4cupdiced apple
1/2cupdiced celery
1/3cupdried cranberries
1/3cupsliced almonds
lemon juice
1/2 to 3/4cupplain Greek yogurt
1/3cupbarbecue sauce
salt and pepper to tasteto taste
Croissants, whole wheat bread, or lettuce for serving
Instructions
Place the chicken on a baking sheet covered in cooking spray. Sprinkle with salt and pepper. Cook at 350 for 22-28 minutes or until cooked through. Allow to cool. Then dice or shred.
Combine all ingredients except the bread and/or lettuce, starting with just 1/2 cup of plain Greek yogurt. If the mix is dry, add more yogurt. Salt and pepper to taste.
Serve on halved croissants, whole wheat toast, or in a small ramekin lined with crisp lettuce.
