A great way to use up all that Halloween candy but these cookies are so good, you'll want to make them year-round!

Ingredients
1/2cupunsalted butter
1/2cupgranulated sugar
1/2cuplight brown sugar
1/2cup peanut butter
1egg
1tspvanilla extract
1/4tspkosher salt
1/2tspbaking powder
1/2tspbaking soda
1cupall-purpose flour
1 1/4cupoats
3/4cupM&Ms
3/4cuppeanut butter cups, chopped
1cuppretzels, chopped
Instructions
Cream the butter and sugar together until light and fluffy.
Add the peanut butter and mix well. Then add the egg and vanilla and mix to combine.
Carefully add that salt, baking powder and baking soda. Then slowly add the oats and the flour. Set the mixer on low to combine only until just mixed together.
Mix in M&Ms, peanut butter cups and pretzels. Chill dough for at least 15 minutes in the fridge.
Preheat oven to 350 degrees. Line two sheets with silpats.
Scoop out 1" size cookies and bake for 11-13 minutes. Don't over bake, but do wait until they are just starting to brown on top.
Remove from oven and allow to cool completely on the pan. This won't take long. Store extras in your cookie jar.

Adapted from Tastes Better from Scratch blog.I know most cookie recipes call for mixing the dry ingredients together before adding them to the butter, sugar, and egg mixture. I'm sure that makes for a perfect cookie, but this version above makes for an almost-perfect cookie with one less dish to clean, so it's good enough for me. If that hurts your head, combine the flour, oats, salt, baking soda and baking powder together in a large bowl before adding to the wet mixture.
