Zucchini, Corn and Goat Cheese Relish

Remember when we did the booth at the Tosa Farmers Market and teased y’all with the sauteed zucchini and corn relish? Well, now’s your chance to try it yourself. I call this a relish and not a plain side because it really can be used in a variety of ways.

Instructions:  Mix it in with pasta for a cold salad. Heat and serve it over grilled chicken. Toast slices of baguette and make seasonal bruschetta. (Try a drizzle of balsamic over that last (or any!) option for an added punch.) Let me know how you like it best.

Ingredients: Zucchini, corn, goat cheese, salt and pepper, olive oil, garlic
