Veggie Chili con Carne

Veggie chili with meat?? I know it’s confusing, but once you taste it, you’ll see it makes sense. We only use half the meat in a traditional chili recipe and replace it with all sorts of good for you veggies like carrots, squash, and sweet potato.


ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.  If you order the “lunchbox style”, it comes with fruit.


Instructions: Reheat on the stove top in a saucepan or in the microwave in a microwave-safe bowl.

Ingredients: Olive oil, onion, garlic, ground beef, crushed tomatoes, chili powder, brown sugar, cumin, cloves, cinnamon, Serrano pepper, green pepper, carrots, butternut squash, sweet potato, corn, celery, pinto beans, salt and pepper
