BREAKFAST: Sweet Potato Hash

I can’t decide if this is better on a Saturday morning or a weeknight “brinner”. Maybe both! This kit meal of sweet potatoes, bacon, eggs, and more comes to you all ready to roll. You just heat up the oven and put it all on a baking sheet. By the time your shower is done, a hot breakfast will be waiting.

Instructions: Wash and chop the potatoes into bite-sized pieces. (Sorry we didn’t do it ahead of time, but potatoes get funky if not used right away.) Place the potato mixture on a baking sheet coated with cooking spray. Drizzle with the seasoned olive oil and scatter the bacon around the sheet. Roast for 25 to 30 minutes at 425, tossing once during cook time.

Once the bacon is crisp and potatoes are cooked, add the eggs directly on top of the sheet. Stick the pan back in the oven and bake anywhere from 5 to 12 minutes, depending on how cooked you’d like your yolks!

Remove the pan from the oven and serve the potatoes and eggs immediately. Top with sliced green onions.
