Summer Chicken Parmesan

We change up this Italian favorite by using a lighter breading and those seasonal favorites – cherry tomatoes and fresh zucchini. Comes with a side of pasta to round out the meal.


ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.  If you order the “lunchbox style”, it comes with fruit.


Instructions: Preheat broiler with oven rack in the middle slot.

Place flour, breadcrumbs and the lightly beaten egg in separate shallow dishes. Dredge chicken in flour, dip in egg and dredge in breadcrumbs.

Heat oil in a large skillet over medium-high heat. Cook two cutlets at a time, about 1 minute per side. Place on a baking sheet covered in foil and cooking spray.

Sauté veggies in the chicken pan.

Top cutlets with cheese and broil until melted. Meanwhile, reheat pasta. Serve using the veggies as a sauce for both pasta and chicken.
