Roasted Zucchini

Freshly roasted zucchini is a perfect complement to this week’s entrees. These are lightly seasoned to bring out the bright flavor of one of our favorite seasonal veggies.

Instructions: Since some of the other dishes this week just require reheating, I’ll do the cooking for the zucchini, too. If you rather roast the zucchini yourself (400 degrees for 15 to 20 minutes) for an even fresher product, please leave a comment in the notes.

Ingredients: Zucchini, sea salt, pepper, olive oil, lemon juice
