Roasted Squash

Freshly roasted squash are a perfect complement to this week’s entrees. These are lightly seasoned to bring out the bright flavors of one of our favorite winter veggies. Simply delicious.

Instructions: Since some of the other dishes this week just require reheating, I’ll do the cooking for the squash, too. If you rather roast the squash yourself (400 degrees for 15 to 20 minutes) for an even fresher product, please leave a comment in the notes.

Ingredients: Squash, sea salt, pepper, olive oil, lemon juice
