Mustard and Oregano Pork Chops Over Red Potatoes and Green Beans

Pork chops and red potatoes roasting in the oven will make your house smell delightful. The green beans add a burst of freshness that is so good, you will wish you ordered double. This kit takes a little more time to get to the table, so plan accordingly.


ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.  If you order the “lunchbox style”, it comes with fruit.


Instructions:

ON THE GRILL: Preheat grill with medium-high heat and lightly oil one side of the grate the grate. Use a grill basket or a sheet of foil (fold to seal the foil packet if that’s the route you go), to cook the potatoes and green beans. It should take around 20 minutes for the potatoes to cook through.

Meanwhile, cook the chops on the oiled side of the grill until no longer pink, 5 to 6 minutes per side. (Chops will be ready to flip when they release from the grill.) Let stand a couple of minutes before eating.

IN THE OVEN: Preheat oven to 400 degrees. Lightly oil a baking sheet and chop potatoes into 1″ pieces. Place potatoes in a single layer onto the prepared baking sheet. Drizzle with seasoned olive oil; toss to coat. Season with additional salt and pepper, if desired. Bake for 20 minutes, then add pork chops and green beans to the same baking sheet.

Place into oven and roast until the pork is completely cooked through, reaching an internal temperature of 140 degrees, about 20-22 minutes. Then broil for 2-3 minutes, or until slightly charred.
