ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with fruit and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, lemon poppy seed bread or a cocoa-nutty blondie bar.

Instructions:

Preheat oven to 400 degrees. Lightly oil a baking sheet and chop potatoes into 1″ pieces. Place potatoes in a single layer onto the prepared baking sheet. Drizzle with seasoned olive oil; toss to coat. Season with additional salt and pepper, if desired. Bake for 20 minutes, then add pork chops and green beans to the same baking sheet.

Place into oven and roast until the pork is completely cooked through, reaching an internal temperature of 140 degrees, about 20-22 minutes. Then broil for 2-3 minutes, or until slightly charred.

Ingredients: Pork chops, mustard, apple cider vinegar, lemon juice, canola oil, honey, oregano, garlic, red potatoes, green beans
