Irish Pub Salad

I still have yet to find proof that this is actually a salad you’d find in an Irish pub, but I’m okay playing pretend. In this unique salad we combine pickled beets, hard-boiled eggs, cheddar cheese and Boston lettuce with a mustard and tarragon dressing. It really is a surprise hit!


About Single Serving Orders

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with fruit and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, pea and wasabi dip or mini stout cupcakes with Irish cream frosting.


Instructions: Give the dressing a good shake then combine with all salad ingredients.

Ingredients: Boston lettuce, organic pickled beets, organic hard-boiled eggs, cheddar cheese, cucumber, cherry tomatoes, Dijon mustard, tarragon, rice vinegar, avocado oil mayonnaise
