Sweet Corn and Black Bean Tacos with Mexican Brown Rice

There’s a place in Milwaukee when everyone goes bananas for the tacos. This is my rendition of one of my favorite vegetarian tacos on their menu. Sauteed corn and crispy radish give these tacos crunch while jalapeno, black beans, and feta cheese bring on the flavor. Served with traditional Mexican rice made with the healthier brown rice.


About Single Serving Orders

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.  If you order the “lunchbox style”, it comes with a tasty piece of fruit.


Instructions: Heat the tortillas, black beans and corn, as desired. Top each tortilla with black beans, corn and avocado. Top with hot sauce or salsa, as desired.

Heat the rice in the microwave or stovetop.
