Chicken Larb with Coconut Rice and Pickled Cucumbers

Chicken larb was new to us as well, but we are so glad we experimented! This Thai-inspired chicken and rice dish warms you up with red chili paste and ALL the fresh herbs. You’ll need to plan ahead as the cucumbers will need about 20 minutes to marinade in their brine. Don’t do it more than a couple hours ahead of time. Fresh is best!


About Single Serving Orders

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.  If you order the “lunchbox style”, it comes with fruit.


Instructions: At least 20 minutes before your meal, combine the cucumbers and onion with the rice vinegar. Let marinade.

Reheat chicken and rice in the microwave. Top rice with chicken, pickled cucumbers, and herbs.
