Chicken Fajitas with Seasoned Black Beans

Chicken fajitas are so versatile we make them with all kinds of sides. This time we have seasoned black beans to spice up the dish. No time to make it this week? No worries, this dish freezes nicely for another night.

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.  If you order the “lunchbox style”, it comes with fruit.


Instructions: Completely thaw, if previously frozen.

Heat oil in a large skillet over medium-high heat. Add vegetables and stir-fry until soft, about three minutes. Remove veggies from skillet and add in chicken. Stir-fry chicken until well browned, about 10-12 minutes. Remove pan from heat and return veggies back in. Toss to combine. Serve with tortillas and cheese.

Meanwhile, reheat beans in the microwave or stovetop.
