Cheesy Broccoli and Chicken Casserole

Another “throw in the oven” option that is sure to please your pickiest eaters AND sneak in a vegetable. Can be made with or without shredded chicken. Either way, I use brown rice and sharp cheddar to add nutritional value to this blast from your mama’s table past.


About Single Serving Orders

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.  If you order the “lunchbox style”, it comes with a tasty piece of fruit.


Instructions: Preheat oven to 400 degrees. Remove plastic wrap and foil. Bake for 30 minutes until bubbly and lightly golden on top. Let rest for a few minutes before serving.

Ingredients: Chicken breasts, Butter, garlic, flour, milk, Dijon mustard, cheddar cheese, Parmesan cheese, brown rice, broccoli
