Roasted Cauliflower and Cheese Soup

Growing up my favorite side dish was something my mom made with cauliflower, Velveeta, and a whole lotta butter. I tune up the recipe by replacing the fake food with hand-shredded cheddar cheese, rich, organic vegetable broth, and fresh thyme and making it a soup. Turns out my daughter loves this version. And the circle of life continues.

If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.  If you order the “lunchbox style”, it comes with a tasty piece of fruit.


Instructions: Reheat on the stovetop in a saucepan or in the microwave in a microwave-safe bowl.
