Buffalo Chicken Tacos with Sweet Potato Fries


Bar food has gone healthy! Chicken breasts are grilled and then coated in homemade buffalo sauce. A bleu cheese dressing cools down the dish, while lettuce and celery give the tacos crunch.

Sweet potatoes get a quick toss in a spiced-up oil and baked in the oven.

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with fruit and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, a buttermilk biscuit or Brooke’s black and white cookie.

Instructions: Preheat oven to 400 degrees. Place sweet potatoes on foil-lined baking sheet and toss with olive oil mix. Bake until soft, about 15-20 minutes. Watch carefully! These burn easily.

Heat chicken on the grill or in a saute pan. Toss with buffalo sauce. Combine lettuce and celery with bleu cheese dressing.

Warm tortillas for 10 seconds in the microwave. Divide chicken mixture evenly among tortillas. Top with lettuce mixture.
