BREAKFAST: Blueberry French Toast and Bacon

When the weather outside is frightful, this breakfast is so delightful! Stay in your pjs and enjoy brunch at home with this comforting, custard-y casserole and thick applewood smoked bacon. The casserole comes to you frozen. This dish is amazing, but a little work is needed the night before, plan accordingly.

Instructions: The night before you want to eat the French toast, pour the egg mixture into the bread and berries in an oven-safe dish coated in cooking spray. Using a spoon, make sure all the bread gets covered in liquid. Cover and place in the fridge for at least 2 hours (even better – overnight!) In the morning, uncover and bake at 350 for 35 minutes or until warmed in the center.

About 20 minutes before the casserole is done, line a baking sheet with aluminum foil and lay bacon on the pan. Add to oven and bake for 15-20 minutes, starting to check around minute 12. When ready, remove from oven and place bacon on a plate lined with paper towel. Cover with foil or place in the microwave to stay warm until the French toast is ready.
