Ham and cheese casserole

I like to use frozen diced potatoes to save me the trouble of doing it myself. Also, get the ham from the deli counter. Ask for really thick slices of meat then you only have to cut two ways. Finally, we suggest a cheese sauce below. If you have one in your repertoire already, just go for that.

Try this recipe when you feel like stocking the freezer. It doubles easily so you can make one casserole for tonight and another for later.

This is a great casserole to make ahead of time, meaning you can keep it in the freezer for up to three months or prep ahead for a great potluck dinner contribution.

Ingredients

Sauce

  • 2 tbsp unsalted butter
  • ½ onion diced
  • 2 tbsp flour
  • ½ cup milk
  • ½ cup chicken broth
  • ¼ tsp pepper
  • ½ cup sharp cheddar shredded
  • salt & pepper

Casserole

  • lbs potatoes diced
  • 1 cup ham diced
  • ½ cup peas
  • ½ cup sharp cheddar shredded

Instructions

  • Preheat oven to 400°F. Over medium heat, melt butter in a saucepan. Add onion and stir until softened, about 4 minutes. Add flour and cook an additional 2 minutes while continuously whisking. Pour in chicken broth and milk all at once. Whisk over medium heat until thick and bubbly. Remove from heat and stir in cheese.
  • Place half of the potatoes in a baking tin, sprinkle with ham and peas. Top with remaining potatoes, and pour the sauce over top. Top with shredded cheddar. Cover with foil and bake 30 minutes or until potatoes are fork-tender. Remove foil, and bake an additional 10 minutes or until cheese is lightly browned.

Notes

  • Use frozen diced potatoes to speed things along.
  • For the ham, go to the deli counter and ask for very thick slices. Then you only have to cut two ways when you get home.

VEGGIE LOVERS

  • Skip the ham and add in extra veggies. Mushrooms, peppers or squash would work great. Chopped asparagus spears could be seasonally appropriate. (But might get mushy – go for thicker spears so they hold up.)

MEAT LOVERS

  • Another handfull of diced ham never hurt anyone.

GLUTEN-FREE

  • Use your favorite alternative thickening agent to make the sauce

DAIRY-FREE

This is not your dish, darling. Maybe try our roast chicken with potatoes and carrots using olive oil in place of the butter instead.
