Well, doesn’t this look patriotic! Red and blue berries stand out with brilliant white cheese on a bed of the freshest greens you can find in this mixed berry and goat cheese salad. Mix up a quick batch of the easiest salad dressing you will ever make in your life and dinner will be on the table in no time!
If you’d like to dress up the salad even further, consider adding toasted pecans or almonds. Homemade (or not!) croutons or leftover grilled chicken would also be nice additions. Really, this salad just serves to be a canvas for a fruity vinegar and delicious olive oil. I’m partial to Marva’s Greek oil and vinegar collection, particularly this pomegranate vinegar I recently picked up at the Shorewood Farmers Market. If you can believe it, a tiny teaspoon in a large bottle of water is the perfect flavoring! Back to the salad – use whatever oil and vinegar you already have at home, but try to find the best you can afford.
Mixed Berry and Goat Cheese Salad
- 1 head lettuce or 5 oz. box of mixed greens
- 1 cup blueberries
- 1 cup sliced strawberries
- 1/2 cup goat cheese
- 3 tbsp extra virgin olive oil
- 1 tbsp flavored vinegar
- to taste salt and pepper
Clean, dry and arrange the lettuce on four serving plates. Top with blueberries and strawberries. Crumble on the goat cheese. In a small bowl or sealable jar, whisk or shake the olive oil and vinegar together to form an emulsion. Add salt and pepper to taste. Top the salad with dressing and enjoy.
Dressing will separate if it sits. Try to it bring to room temperature before serving, if made ahead.
