Quick and Easy Fried Rice

When I first learned to cook, white rice with soy sauce and butter was my go to meal. This fried rice recipe is the grown-up version of that dish – still super easy, but with a few vegetables so I don’t feel that bad when I eat the whole bowl. Enjoy!

Clean out the fridge with this easy meal. I suggest peas and carrots, but any vegetables would probably work great.

  • 2 cups cooked brown rice
  • 2 eggs
  • 2 tsp sesame oil (or olive oil)
  • 3 medium carrots, diced
  • 1 cup green peas
  • 1 tbsp soy sauce
  • 1 tbsp unsalted butter (optional)


  • Heat 1 tsp of sesame oil in a large skillet over medium high heat. Crack eggs in the skillet and cook to over easy, chopping into pieces with your spoon along the way. Remove cooked egg to separate plate.
  • Heat remaining tsp of sesame oil and stir fry carrots and peas until soft. Add egg and rice back to skillet and mix together. Add soy sauce (and butter, if you choose) and mix again. Add more soy sauce to taste.
