Tilapia with Mashed Potatoes and Sugar Snap Peas In Balsamic Butter Sauce

This is one of my favorite “at home date night” dinners. The richness of the sauce, creaminess of the potatoes, and elegance of the fish are begging for good conversation and a bottle of red wine. (Yes, I’d suggest red even though we’re eating fish. You do you, people!)

Put the kids to bed, invite over a special friend. Tonight’s gonna be a good, good night.


ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with an orange and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, some carrot zucchini cake, or the orange chocolate bread. .


Instructions: 2/8/17 edit – I tried to completely make the balsamic butter for you this time. Alas, you now have a container of solid balsamic. Leave out on the counter for a couple hours or immerse in a shallow dish of hot water to slightly melt. Then remove from the plastic to reheat in the microwave. Don’t warm too much! 

Heat 1 tbsp oil in a large skillet over high heat. Sprinkle fish with salt and pepper. Saute until golden two pieces at a time, about 2 minutes per side. Remove fish to a plate, keep warm while cooking the other portions, if necessary.

Meanwhile, cook snap peas in boiling salted water until crisp-tender, about 1 minute.

Reheat mashed potatoes in the microwave or on the stovetop adding milk if necessary.

Divide potatoes, fish, and peas among plates; drizzle with sauce.
