ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with watermelon and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, a parm breadstick or a lemon bar.


Instructions: Preheat broiler with oven rack in the middle slot.

Place flour, breadcrumbs and the lightly beaten egg in separate shallow dishes. Dredge chicken in flour, dip in egg and dredge in breadcrumbs.

Heat oil in a large skillet over medium-high heat. Cook two cutlets at a time, about 1 minute per side. Place on a baking sheet covered in foil and cooking spray.

Top cutlets with cheese and broil until melted. Meanwhile, reheat pasta and veggies. Serve using the veggies as a sauce for both pasta and chicken.
