BBQ Pulled Chicken Sliders with “Squachos”

About Single Serving Orders

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with watermelon and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, double chocolate zucchini bread or Mexican fudge.


Instructions: Warm the pulled chicken in the microwave or on the stove. Slice rolls in half and add to the squacho pan in the last few seconds if you’d like toasted buns. (Teehee.)

Meanwhile, coat a foil-lined baking sheet with cooking spray. Arrange squash in a single layer on pan; sprinkle evenly with cheese and panko. Broil 3 to 4 minutes or until cheese melts and squash begins to brown. Remove pan from oven; sprinkle with salt, and pepper.
