Posole with Quinoa

$7.00$24.00

Brooke is back with another great soup recipe. This one is posole, a traditional Mexican soup named for a star ingredient, hominy. Our version skips the pork and instead adds quinoa and chunks of avocado. Y’all… I’m allergic to quinoa and I’ll still probably order this for us. It’s one of the best soups I’ve ever had!

ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with fruit and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, pomegranate and cranberry dip with crackers or mint brownies.

Instructions: Reheat on the stovetop in a saucepan or in the microwave in a microwave-safe bowl. Cut avocado into chunks. Top the soup with avocado after heating.

Ingredients: Tomatillos, vegetable stock, carrot, garlic, red onion, olive oil, salt and pepper, coconut cream, cilantro, spinach, hominy, lime, quinoa, radishes
