Green Bean Fries

Call them fries so the picky eaters eat ’em, but these good for you greenies still count as a “real” veggie! We coat the fresh beans in breadcrumbs and egg before a good roast in the oven. Serve with your favorite sauce. We really liked BBQ and ranch in our house. DIRTY DISH WARNING – You will have to get your hands (and a couple dishes) dirty for this one, but I swear its worth it.

Instructions: Preheat oven to 400 and coat a baking pan with cooking spray or olive oil. (Use foil, too for easier clean-up.) Lightly beat your egg and pour into a shallow dish. Put breadcrumb mix in a separate shallow dish. Shake the beans in the bag of flour and after shaking off the access, dip beans a few at a time in the egg and then breadcrumbs. Spread evenly on baking sheet. Bake for 20-30 minutes. Serve with your favorite sauce.

Ingredients: Green beans, King Arthur all-purpose flour, panko, breadcrumbs, egg, salt, pepper, Penzey’s Northwoods seasoning
