Let’s try something Middle Eastern, shall we? Homemade falafel patties will be stuffed into fresh pita bread with arugula, tomato, red onions, and a tangy yogurt-based sauce. Serve this with a light cucumber tomato salad that everyone will enjoy.


About Single Serving Orders

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with a banana and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, a banana chocolate chip muffin, or an all-American rice krispy treat.


Instructions: Place falafel patties on a wire rack set on a baking sheet. Put the baking sheet in oven; bake at 450°F for 10 minutes.

Meanwhile, take cucumber salad out of the fridge to take off the chill.

Cut each pita in half and slice the tomato. Spoon about 1 tablespoon yogurt mixture into each pita pocket; top with a falafel patty, tomato slice, arugula, and red onion slices.
