Citrus and Black Pepper Chicken with Lemon Parmesan Pasta and Roasted Asparagus

This dinner will have your kitchen smelling like the tropics and your belly pleasantly pleased. Boneless chicken breasts are marinated in a unique sauce of lime, orange, chili powder and black pepper. The pasta is cheesy and bright. Fresh asparagus rounds out the meal.


ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with a banana and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, cayenne chocolate fudge, or a slice of carrot zucchini cake.


Instructions: Preheat oven to 425 degrees. Coat a baking cheese with cooking spray. Toss the asparagus with the seasoned olive oil and bake for 12 to 15 minutes.

Meanwhile, heat a teaspoon of oil or a coating of cooking spray in a large skillet over mmedium-highheat. Place chicken pieces in the hot skillet along with half of the marinade. Cook, turning occasionally to coat the chicken. If the sauce starts to evaporate, turn down the heat or add a bit of water.

Reheat spaghetti in the microwave.
