Oven-Fried Catfish with Cajun Roasted Veggies and Remoulade Dipping Sauce

ABOUT SINGLE SERVING ORDERS

This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.

If you order the “lunchbox style”, it comes with blueberries and your selection of extra side. Please let me know in the notes if you’d like additional fruit, carrot sticks, an Ina’s Lemon Bar or a Mint Chocolate Brownie.


Instructions: Preheat oven to 425 degrees. Chop red potatoes into 1/2″ pieces. Place all vegetables in a casserole dish. Give seasoned olive oil a shake and drizzle over vegetables. Stir veggies to coat. Cook for 40-45 minutes, sample a potato to know when they are done.

Meanwhile, lightly oil a baking sheet. (You may want to put down a piece of oiled aluminum foil for easier clean-up.) Whisk egg in a flat dish with sides. Salt and pepper both sides of each pieces of dish, then, working one at a time, dip fish in eggs and then give a shake in the bag of breadcrumbs to coat well. Transfer fish to baking pan and bake for 15 minutes or until fish flakes easily.

Serve with remoulade sauce.
