Beef Fajitas with Mexican Street Corn

Feeling like Mexican this week? I certainly hope so! I'll bring the sizzling beef fajitas and cheesy “elote”; you bring the margaritas. The fajita mix freezes nicely, so consider ordering some for this week and some for the freezer.
ABOUT SINGLE SERVING ORDERS
This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below.
If you order the “lunchbox style”, it comes with grapes and your selection of extra side. Please let me know in the notes if you'd like additional fruit, carrot sticks, cranberry pecan oatmeal cookie or tacky saltine toffee.
Instructions: Completely thaw, if previously frozen. Heat oil in a large skillet over medium-high heat. Add vegetables and stir-fry until soft, about three minutes. Remove veggies from skillet and add in beef. Stir-fry beef until well browned, about 10 minutes. Remove pan from heat and return veggies back in. Toss to combine. Serve with tortillas and cheese.
Meanwhile, heat the corn in microwave or stove top. Top with cheese and chipotle salt to taste.
