This size is available in “lunchbox style” or “make at home” versions. For the lunchbox, I’ll do all the work and include extras, so you’re all set for the brown bag. If you select “make at home”, you get to spend some time in the kitchen. I don’t do your dishes, but I’ve done the rest of your dirty work. Basic time and instructions are included below. If you order the "lunchbox style", it comes with a banana and your selection of extra side. Please let me know in the notes if you'd like additional fruit, carrot sticks, a chocolate mint brownie, or parmesan breadstick on the side.
Instructions: Preheat the oven to 400 degrees. Place the chicken on a baking sheet coated in cooking spray, brush with barbeque sauce and bake for 7 minutes. Remove from oven, brush on more sauce, and return to the oven for another 7 minutes. Remove from oven, brush on the last of the sauce, and turn up the temperature to 425 degrees. Continue roasting for another 5 to 7 minutes, or until the sauce is starting to brown around the edges and the thighs are totally cooked through. Remove from the oven and let sit for at least 10 minutes before serving. Alternatively, get outside and use the grill following the same general timeframe. The potato salad can be served hot or cold. I prefer hot. To reheat, you can use the microwave or pour into an aluminum foil pouch to heat on the grill. BBQ Chicken with Potato Salad

Y’all, this barbecue sauce is so good you better bring extra napkins to the table! I smother oven-roasted chicken thighs with the delicious elixir and pair it with a simple potato salad using chives straight from my garden. The salad is good hot or cold. Throw it all on the grill, the oven, or quick in the microwave to make dinner.
